Windy Boats is an Anglo-Scandinavian company making highly regarded yachts so any feature in their top-quality customer magazine had to appeal to a diverse range of readers across several cultures.

Our search for foraged food took us to Noma in Copenhagen, voted the world’s top restaurant (we’re prepared to endure any hardship to get a good story). After ruminating on monkfish livers and wild beach roses, we headed to Finland, via a food installation in London, for grey squirrel and wood sorrel.

The owners of Windy Boats felt the result was the best feature in the magazine, but for us the real pleasure was in re-discovering real food, available in every wood and hedgerow in just about every country. Although we can’t bring ourselves to replicate the grey squirrel recipe. Those fluffy tails – too cute.
